fix(ethereum-listener): genesis block for the mainnet v6 rollup - #13

The canonical mainnet rollup is now the Aztec 6.x one (0xe37a2663..., version 2070860440), created at Ethereum block 26160102. Without the entry the L1 listener would scan from 24586322, about 1.6M blocks of 500-block chunks per event, before reaching it. Co-Authored-By: Claude Opus 5.5 <[email protected]>

0xE37A2663…, version2070860440. Its contracts match the 6.0.0 ABIs exactly (every selector is in the bytecode). It was created at Ethereum block 26160102 (checked: the first log from the rollup is in its creation transaction).Without this entry, the mainnet v6 stack's L1 listener would start from the mainnet default
