Keep the Powfi overview page, link to the User Guide and Developer Guide on Mintlify, and redirect the removed pages to /powfi.

The Powfi docs now live on Mintlify at https://docs.powfi.alephium.org/. This PR removes the Powfi guide pages from this site and points readers there.
docs/powfi/index.md(the Powfi overview) and adds links to the User Guide and Developer Guide.user-guide,choosing-a-wallet,funding-a-wallet,swap,provide-liquidity,stake, andfaq./powfi/*URL to/powfiso existing links still work.docusaurus build --locale enpasses. The broken-link warnings it prints are on unrelated pages and were already there.
