Add factories for symmetric ciphers #174

#133 punted on the task of creating factories for all the new symmetric ciphers (all the AES modes and Ascon).

I know we don't really like the way our factories work now, but we should at least be keeping them up-to-date with new algorithm additions so that it's complete when we come to do a sweeping refactor later.
