Description:

• elastic.yml now runs Elasticsearch 9.5.4, replacing 7.17.
• elastic8.yml is bumped to 8.19.22.
• Both files:
  • disable security, so the app can connect over plain http;
  • limit the Elasticsearch heap to 1 GB;
  • drop the outdated "not tested by CI" warning, since browser tests already use these files.
• The README says that elastic8.yml needs composer require elasticsearch/elasticsearch:^8.19.

This can be merged before ibexa/elasticsearch#87: the current client 8 also works with Elasticsearch 9.

For QA:

1. Start a project with elastic.yml, run php bin/console ibexa:elasticsearch:put-index-template and php bin/console ibexa:reindex: search works.
2. Do the same with elastic8.yml (client ^8.19): search works.

While on it, I think we can remove all the entries up to PHP 8.3 from docker. The starting point for CMS since 6.0 will be 8.4 (8.5 eventually, but this batch will be handled in one go afterwards).
