feat: Expose FDv2 through the client SDK configuration

Summary

Exposes FDv2 through the client SDK's public configuration, so an application can select and configure the FDv2 data source.

• Adds a public FDv2 configuration builder for the data source and the connection mode.
• Extends the endpoint configuration with the FDv2 client base URLs and eval endpoints.
• Selects the FDv2 orchestrator in place of the FDv1 data source when the application configures it.
• Maps the orchestrator's status onto the client's public data-source status.
