Rename "Release switch keys" to "Pause listening" - #1212

The tray item and Home button now read Pause listening / Resume listening, and Home shows Listening paused, so the label says what the person wants rather than reading like a key press. Docs updated to match. Closes #1211 Co-Authored-By: Claude Fable 5.1 <[email protected]>

The tray / menu bar item and the Home page button read Release switch keys / Resume switch keys, and Home showed Keys released. "Release" reads like a key press, and the label described the mechanism rather than the goal. They now read Pause listening / Resume listening, and Home shows Listening paused. Internal identifiers are unchanged.
Docs updated: account-and-privacy, get-started/add-a-switch, troubleshooting.
